Hold the following buttons right after scoring a touchdown:

Heismen pose - X.
Ball spike - Circle.
Muscle flexing - Square.
Back flip - Triangle.
Spin the ball - R1.

Defense Always Intercepts
From the Main Menu highlight and enter the Game Settings. Highlight and enter the Secret Codes section, Press Select and enter this code: OSKIE
This will make it so the defense will always intercept the ball.

Increase the speed of the daytime effects
From the Main Menu highlight and enter the Game Settings. Highlight and enter the Secret Codes section, Press Select and enter this code: DAYNIGHT
This makes the transition between day and night much quicker.

Unlock All Stadiums
Locate the Cheat Menu. From the main menu choose Game Settings, then Hightlight the Secret Code option. From here hit Select to enter a code.
Try this one. To unlock all of the stadiums input this code: OPENSESAME
Now you can choose either Exhibition Mode or Situation Mode and be able to access any stadium.

Unlock The Juggernaut Team
From the Main Menu highlight and enter the Game Settings. Highlight and enter the Secret Codes section, Press Select and enter this code: BULLDOZER
This will unlock the Juggernaut team in the Create a School mode.
