Put all of your enforcers on the ice for the whole game and set the skill level to at least Pro. You'll get 325 PIM by doing this.

Easy Goals:
Pause the game and select "Choose Sides" then switch to your opponents team and pull their goalie. Wait until their goalie gets off the ice and then switch back to your team. After resuming gameplay quickly shoot before the other teams goalie can get back into position.
